Turkey Meatballs


1 pound of ground turkey

1 can low sodium tomato soup

1/2 cup chopped onions

1/2 cup. brown rice

1/2  cup wheat bread crumbs

pinch salt and pepper

2 egg whites or 1 egg (substitute)


Combine ground turkey with all the above ingredients, except the soup.  Roll into small balls and place meatballs in baking dish.

In separate bowl combine tomato soup with 1/2 can water and mix with fork. Pour soup mixture over meatballs and cover and bake at 350 degrees for 1 hour.
