Food for Thought – You are what You Eat

Like most people, my mom would always remind me to eat my vegetables, especially my carrots because they were good for my eyes. Recently, I was reminded of these nightly conversations around my childhood dinner table when I received a chain email letter that I found so interesting I knew I had to share it with all of you after doing a bit of my own research. I was amazed by what I found and credit God for leaving us these great clues in our fruits and vegetables and how they were “made” for our bodies.

Science does tell us that carrots are good for our eyes- thanks mom! To some, a sliced carrot looks the human eye with its radiating lines resembling our pupil and iris, but most importantly carrots contain beta carotene (proven to reduce eye disease) and are high in vitamin A which enhances blood flow to and function of the eyes. Next time you cut open a red ripe tomato you’ll notice 4 chambers just like the human heart. Tomatoes contain lycopene which boosts natural antioxidant defenses and reduces damage to white blood cells in turn promoting a healthy heart. If you are feeling forgetful lately then maybe you should add some walnuts to your diet. Not only do walnuts look like little brains with left and right hemispheres, upper and lower cerebrums, and wrinkles like the neo-cortex, they help develop 36 neuron-transmitters for brain function and are high in omega-3 fatty acids. Who knew that eating walnuts could help support the development of a healthy brain and prevent brain deterioration with age? Do you worry about your kidneys? Look to kidney beans to heal and maintain healthy kidney function.

For women, specifically, load up on avocados, eggplant, and pears to help with the health and function of the uterus and cervix (they even resemble female reproductive organs shape). Avocados are also credited with balancing hormones, helping shed pregnancy weight, and what I find most ironic is that it takes nine months for avocados to grow from blossom to fruit. Olives aid in the health and function of ovaries and citrus, like grapefruit and oranges, are good for breast and mammary gland health.
Next time you eat sweet potatoes remember you are helping your pancreas balance your glycemic index and adding onions and garlic to any dish will help clear your body’s cells of waste and free radicals. Isn’t it amazing what our food can do to our bodies?
